This is the lightest noodle dish I could find and a great one to introduce your young ones to Chinese food with. However, I like to spice this up with a 1/2 cup of tahini and a little Sriracha chili sauce added to the dressing. Start with a 1/2 tsp Sriracha and add more to taste.
- 1/4 cup soy sauce
- 4 tablespoons rice wine vinegar
- 2 tablespoons sesame oil
- 2 tablespoon sugar
- 2 teaspoon lime juice
- 1 tablespoon fresh ginger, grated
- 1 lb chicken breasts, grilled and sliced
- 8.8 oz soba or somen noodles
- 3 cups broccoli
- 1 small bell pepper, sliced (any color you like)
- 1 tablespoons sesame seeds
In a small bowl, whisk together soy, vinegar, oil, ginger, sugar and lime juice. Bring a large pot of salted water to a boil. Add noodles and cook according to package directions. Add broccoli to noodle pot for final 4 minutes of cooking. Drain and rinse in cold water.
Place noodles, broccoli and bell pepper in a large bowl. Drizzle with dressing and toss to coat. Sprinkle with sesame seeds and serve.
Note: You can use any leftover, cooked chicken you have on hand for this recipe, including a rotisserie chicken from the grocery store. If your kids enjoy Chinese food, you can also do take out for this dinner and a movie!
