I baked both pigs-in-a-blanket and chicken-in-a-blanket in the picture above but I have to say that the chicken ones were my favorite.

  • 2 packages al fresco apple maple chicken sausage
  • 1 package refrigerated crescent rolls

Preheat oven to 350 degrees.  Rinse sausages in cold water and dry with a paper towel.  Cut each sausage in half.  Unroll crescent dough and keep the dough in its square shape.  Cut dough into strips and wrap around each sausage.  Place covered sausage on a baking sheet coated with parchment paper.  Bake for 10-15 minutes or until dough in golden brown.

Note:  To make Pigs-in-a-Blanket, follow the recipe above but use mini hot dogs instead of the chicken sausage.  I did try rolling cheddar cheese into the pigs in these but the flavor was lost in the crescent roll, so the extra effort was not worth.  It’s better to dip them in cheese sauce after they are cooked.

    Bacon Cuccumber Sandwiches w/ Cream Cheese Spread. (usually on plain white bread no crust)whip softened cream chesee with finely chopped fresh mint (use mint sparingly)spread on crustless bread (you don’t have to cut the crust off)layer with cuccumber (sliced lengthways about 1/8 thick the length of bread slice)layer with cooked bacon slices (one piece per cuccumber slice, or more if you want)you can cut the sandwich so that you have 3 or 4 finger sandwiches or in half, depending on how many people you have and how much food you have I guess.Anyway, it makes a great sandwich.
