Cinnamon Apple Muffins

Having an abundance of apples in the house from an apple picking excursion forces you to get creative with the apples before they go bad.  There is only so many apples and apple pies a person can eat.  I like to bake some of the apples into muffins.  Muffins are great for breakfast or for snacking so they can be eaten any time of the day.  My kids don’t like chunks in their muffins (unless  they are chocolate chips) so I decided to shred the apples. Shredding the apples with a grater makes them melt right into the muffins once baked.  Give it a try and see what you think!

Cinnamon Apple Muffins

  • 2 cups flour
  • ½ cup granulates sugar
  • 3 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup butter, cut into chunks
  • 2 medium apples, peeled, cored and shredded
  • 1 egg
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon brown sugar

Preheat oven to 425˚.  Combine flour, sugar, baking powder, ½ teaspoon of cinnamon and salt in a large bowl.  Add butter to bowl and cut into flour mixture with a pastry blender or 2 knives.  Remove ¼ cup of mix and set aside.

Add apples to flour mixture and toss to coat.  Beat egg, milk and vanilla together in a small bowl.  Add to flour mixture and stir until just combined.  Pour batter into 12 paper lined muffin tins.  Add the remaining 1 teaspoon of cinnamon and brown sugar to reserved flour mixture and sprinkle evenly on top of all muffins.  Bake for 15 or until a toothpick inserted inside muffin comes out dry.
