Faux Fried Ice Cream
If you have never tried fried ice cream, you must put it on your bucket list. It is sooo good! Fried ice cream can be associated with both Asian and Mexican cuisine but the first time I tried it, I was in a Mexican restaurant in Long Island so to me it is Mexican!
I saw this recipe in a magazine a few years back and it turned out to be a keeper. Give it a try!
- 2 cups vanilla or chocolate ice cream
- 2 tablespoons sugar
- 1/2 cup Frosted Flakes, crushed
- 1 teaspoon cinnamon
- 1/4 cup honey
Scoop ice cream into 4 balls and place them on a small baking sheet lined with wax paper. Freeze balls until firm, at least 1 hour. Mix Frosted Flakes, cinnamon and sugar in a shallow bowl. Quickly roll balls into sugar mixture,until completely coated with mix. Replace balls on the baking sheet and into the freezer until ready serve.
Serve each ice cream ball with a drizzle of honey.
