Mocha Crunch Cookies

You can never have enough cookies on your cookie plate for the holidays.  I love to keep trying new ones.  I found these in an old cook book I had called Family Living Our Favorite Cookies.  You can actually see the coffee granules in these cookies, which at first made me think, these are not going to be good.  But on the first bite, you get hit with the coffee, sugar and chocolate taste combinations and you quickly realize this is a great cookie. Give it a try.

Mocha Crunch Cookies

  • 1 stick of butter, softened
  • ¼ cup vegetable shortening
  • ½ cup granulated sugar
  • ½ cup firmly packed brown sugar
  • 1 egg yolk
  • 1 ½ teaspoons vanilla extract
  • 1 ¾ cup flour
  • 1 tablespoons instant coffee granules
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup semisweet chocolate chips
  • 2 tablespoons of granulated sugar

Preheat to 375˚.  In a large bowl, cream butter, shortening and sugars until fluffy.  Add egg yolk and vanilla, mix well.  In a separate bowl, combine all remaining ingredients except chips.  Add dry ingredients to creamed mixture and beat until combined.  Stir in chocolate chips.  Place 2 tablespoons of sugar in a small bowl. Using a small ice cream scoop, scoop dough into 1” balls.  Dip balls into sugar bowl, place on baking sheet (lined with parchment) 1 inch apart and flatten with a glass or your hand.  Bake for 10-12 minutes or until cookies are slightly browned on the edges.
