Oatmeal Jen’s

I got this recipe from a friend during a cookie swap.  It had never occurred to me, to put coconut flakes in an oatmeal cookie.  This is a sweet treat!


  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 egg
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup sweetened coconut flakes
  • 1 cup quick cooking oats
  • ¾ cup flour
  • ½ teaspoon cinnamon
  • 1/8 teaspoon nutmeg or allspice

Preheat oven to 350˚.  Cream butter and sugars together in a bowl.  Add egg and vanilla and beat until creamy.  Add remaining ingredients to bowl and beat on low, until combined.  Scoop cookies, with a small ice cream scoop, onto a baking sheet coated with parchment paper.  Bake for 10-12 minutes, or until cookies are lightly browned on the edges.

Note:  My son has reacted to nutmeg in the past, so I always substitute nutmeg with allspice.
