Oatmeal Peach Bake

This Oatmeal Breakfast Bake is one of our favorite things.  It is full of protein and fiber which keeps you full all morning long.  I originally made this with bananas but thought that the peach flavor would be a great compliment to the oatmeal.

  • 4 1/2 cups oatmeal
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup peach jam
  • 4 eggs
  • 1 1/2  cups milk
  • 2 teaspoons vanilla extract
  • 3/4 cup brown sugar
  •  3 tablespoons butter, melted

Preheat oven to 350 degrees.  Mix all dry ingredients in a medium bowl.  Mix all wet ingredients in a bowl except for butter.  Add dry ingredients to wet ingredients; add butter and mix well.  Place in a greased 9 x 13″ pan and cook for 30-35 minutes.

Note:  I sometimes bake a double batch of this and freeze it into individual size portions for a quick and healthy breakfast on weekday mornings.  Also, the kids love when I add chocolate chips to the mix, however, I don’t think it needs it.
