Peach Pie Smoothie

What I love about this recipe is that if you have too many peaches from your U-pick adventure, you can freeze them when they are fresh and use them later. Just peel and chop up the extra peaches. Then freeze them on a baking pan in a single layer.  Once frozen, you can seal the peaches in a zip-lock bag and return them to the freezer until you are ready to make this Peach Pie Smoothie.

  • 7 ounce container Fage yogurt
  • 1 cup frozen peaches
  • 2 tablespoons of honey
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ½ cup skim milk

Place frozen peaches in a blender and pulse a few times until the peaches are chopped up.  Add the remaining ingredients and blend until smooth.  Makes 1 serving.

I love to make this for a quick, no cook breakfast on a hot August morning, but really it is good any time of day. Enjoy!
