Pumpkin French Toast

As the weather starts to turn cooler and the day light grows shorter, it is a great time of year to stay inside and cook new dishes.  I love everything pumpkin this time of year and breakfast is no exception.  Please try my recipe below!

Pumpkin French Toast

  • ¾ cup whole milk
  • 3 eggs
  • ½ cup pumpkin puree
  • 2 tablespoons brown sugar
  • 2 tablespoons granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cinnamon
  • 1 loaf challah bread, sliced thick

Beat together milk and eggs in a large shallow container.  Add the remaining ingredients from pumpkin puree through cinnamon.  Beat well.  Heat a non-stick griddle over medium heat and coat with butter.  Dip bread slices in egg mixture and place on griddle.  Cook for 2-3 minutes on each side or until the bread is golden brown.  Serve hot with maple syrup and confectioner’s sugar dusted on top.
