Fish is not high on the favorite list in my house but I do find that everyone enjoys it more wrapped in coconut.
- 14 ounce can coconut milk
- 1 tablespoon lime juice
- 1/2 tablespoon hot sauce
- 1 1/2 cups panko
- 1/2 cup flaked sweetened coconut
- 1/2 teaspoon salt
- 2 pounds of tilapia or another mild, white fish (cut into chunks)
Combine coconut milk, lime juice and hot sauce in a zip lock bag. Add fish and let marinate for 1-2 hours. Preheat oven to 400 degrees. Combine coconut, salt and panko in a shallow bowl. Toss a few chunks of fish at a time in the bowl and coat with panko mixture. Place fish on a baking sheet lined with parchment. Spray fish with cooking spray and bake for 20-25 minutes or until cooked through. Season with salt and pepper.
Note: When cut into chunks, tilapia will have some thicker and thinner chunks. I try to separate them on the baking sheet and take the thinner chunks out closer to the 20 minute cook time, letting the thicker ones cook closer to the 25 minute cook time.
