Slow Cooker Corned Beef and Cabbage
- 2-3 lbs beef brisket
- 10 peppercorns
- 6 whole cloves
- 4 garlic cloves
- 1 head cabbage
- ½ a bottle of beer (optional)
I like to use Friedrich’s brand of beef but 1 package is never enough for my family so I buy 2 and double this recipe. Trim beef of all visible fat (or as much as you can) place in a slow cooker. Add spices and beer. Fill cooker with water so that the beef is just covered. Cook on high for 5-6 hours. About 2 hours before the beef is done, cut the cabbage into quarters, leaving the stem intact so the leaves do not fall apart. Add the cabbage quarters to the cooker and continue to cook for the remainder of the time.
When beef is done, remove from cooker and slice across the grain. Serve with cabbage.
