Spinach Salad

  • 3 cup spinach leaves, washed and dried
  • 2 tsp maple balsamic vinegar (see Saratoga Olive Oil Company Post)
  • 2 tbsp olive oil
  • 2 tbsp sunflower seeds
  • ¼ cup carrots, peeled and chopped
  • pinch of salt
  • Assorted toppings (slivered almonds, tomatoes, hard boil eggs)

Combine vinegar, oil and salt in a small bowl and whisk until combined.  Place spinach and toppings of your choice in a bowl (whatever you have on hand works here) and toss with dressing.  Serves 2-3 people.

Note:  The more toppings you put on, the more dressing you may have to make.  Just keep the oil and vinegar to a 1 tbsp to 1 tsp ratio.  You will want to eat spinach every night with this dressing!
