Turtle Shells

All three of my kids will eat their spinach when I serve it this way. It takes a little prep time, but once the filling is prepared you can let the oven do the rest of the work.  This recipe is adapted from Giada’s Spinach and Cheese Puff Pastry Packets.

Filling:

  • 10 oz package frozen spinach, thawed and squeezed dried
  • 3/4 cup heavy cream
  • 1 cup Fontina cheese, grated
  • 1/2 teaspoon salt
  • 1 large garlic clove, minced
  • 1/3 cup Parmesan cheese, grated
  • 1/4 cup whole milk

I like to prepare the filling in advance and then when its almost dinner time I can just cook and fill the shells. Prepare the filling by combining all the ingredients in a bowl.   Place the filling in the refrigerator until ready to cook.

Shells:

  • 12 frozen puff pastry shells

Preheat oven to 400 degrees.  Line a baking sheet with parchment and place frozen pastry shells on baking sheet.  Bake for 15-20 minutes or until shells or just cooked or golden brown.  Remove shells from oven and allow to cool.  Using a sharp knife, cut out the circles on the top of the pastry puffs so the puffs become cups.  Fill the cups with as much spinach filling as you can, my kids love when I do that!

Place baking sheet back on oven and cook for another 20 minutes or until the filling is hot.
